2         Roma   Tomatoes -- chopped fine
1/2     large  Onion -- chopped fine
1         large  Jalapeno Pepper -- chopped fine
1/3     cup  Cilantro -- chopped fine

Chop all ingredients by hand, rather than using a food processor.  The texture and presentation will be much better.

Amounts are approximate and to taste.

Tastes great with chicken, steak, pork, or even tuna and mayo.

Yields approx. 24-1/8 cup servings...  Or, for the salsa lover… (you know who you are…)  *grin*  12-1/4 cup servings
