Pork Tenderloin
With Extra Creamy Danish Blue

4 Pork Tenderloin Steaks
1 oz. Butter
1-1½  Red Onions, cut into thin wedges
1 lb. Fresh Mushrooms, quartered
½ tsp. Salt
Coarsely ground Pepper
4 oz. Extra Creamy Danish Blue, cut into small pieces, or 4 slices of Extra Creamy Blue Slices.

Heat the butter in a deep frying pan (an electric skillet works great) until golden brown.

Fry the steaks at moderate heat, approx. 2-3 minutes on each side.

Remove steaks from the pan.

Lightly sauté onions and mushrooms at moderate heat for approx. 5 minutes.

Sprinkle with salt.

Arrange the steaks in the onion mixture, and sprinkle with pepper.

Sprinkle the cheese over the top and cover.  Lower the heat and let set until cheese melts.
