Hen's Meat Loaf

Ingredients:

1 lb. Ground Beef, ½ lb. Pork  (I use X Lean GB & Jimmy Dean Light Sausage)
2 TBS. Dry Onion Soup Mix
1/4 C Heavy Cream
1 Egg
½ C. Crushed Pork Rinds
1 Tbsp. Prepared Mustard
 

Topping Sauce:

1 Tbsp. Sweet Relish (opt.) (I use relish, but you could substitute brown Sugar Twin)
3 Tbsp. Tomato Sauce
1 Tbsp. Prepared Mustard

Instructions:

Heat oven to 350 degrees.
Mix Ground Beef & Pork, Onion Soup Mix, Cream, Pork Rinds, Mustard and Egg.
Press mixture firmly in a loaf pan, lightly sprayed with Pam.
Drop upside down onto an ungreased 9x13 cake pan or cookie sheet.

Bake uncovered 1 hour.

Mix remaining ingredients, and spoon onto loaf (top and sides).

Bake an additional 15 minutes.

Makes 8 Servings
