Cajun Chili

2 lb. Ground Beef
12 oz. Andouille (An' doo' wee) Cajun sausage (I use my food processor to grind it up)
1 (6 oz.) can Tomato Paste
1 (6 oz.) can Water
1 (14.5 oz.) can Diced Tomatoes w/ chilies
1 (14.5 oz.) can Diced Tomatoes
1 (15 oz.) can Soy Beans, rinsed and drained (optional)
1 large Onion, chopped
¼ Cup Cilantro, chopped
1 T. minced Garlic
Cajun Seasoning to taste (for those who like it hot) (optional)

Brown ground beef and ground sausage; drain grease. Add everything to a large kettle and simmer about 30.

Serve with shredded cheese & chopped onion.

Makes 10 servings with Soy Beans or 8 without Soy Beans.
