Beef Stew by Hen

Serves 8
                                                        
2 – 2 ½  Pounds Stew Meat
1 tsp. Bacon Grease
1 Package Onion Soup Mix
1 Can Beef Broth (14 oz)
¾ Can of Water
16 oz package Frozen Broccoli & Cauliflower Cuts
1 Cup Cauliflower
1 Can Diced Tomatoes (14.5 oz)
¼ Salsa (Pace Chipotle)
¼ Cup Heavy Whipping Cream
1 TBS. Worcestershire
BBQ Season Mix to taste
Salt & Pepper to taste
Parmesan Cheese (opt)

Brown Stew Meat in bacon grease.  (I use my pressure cooker, without the lid on)
Sprinkle with BBQ Season Mix and Salt and Pepper to taste.
Add Onion Soup Mix, Beef Broth and Water.
Cover and simmer 1 ½ hours  (I use my pressure cooker, without the rocker)
Add Broccoli & Cauliflower cuts.  (I usually thaw them out under running water first)
Cover and simmer another ½ hour.
Add Diced Tomatoes including juice
Cover and simmer 15 minutes
Steam 1 Cup Cauliflower until soft (10 minutes med/high microwave) (of course, this depends on whether you’re using frozen or fresh, as frozen has already been blanched and therefore takes less time)  then place it in the food processor with the cream and blend until smooth and creamy.  Add this to the pot…  Cover and continue to simmer another couple minutes.
Let set for a couple minutes to thicken.
