Grammy's Boiled Frosting

(For Angel Food Cake)

  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 2 unbeaten egg whites
  • 3 Tablespoons water
  • 1 teaspoon vanilla

Bring water to a boil.
Combine all ingredients except vanilla in double boiler.
Beat at high speed until frosting is fluffy and holds peaks (about 3 minutes)
Add vanilla at end.

Joe's tip: Let it dry on the cake for about 3 days till a nice "crust" forms. Crunch!!
